Oyster sauce: The secret to the perfect Asian taste!
Oyster sauce originates from the Chinese province of Guangdong and its origin dates back to 1888, when it was accidentally discovered by Lee Kum Sheung. Originally it was a simple oyster broth, which naturally reduced to a thick, dark sauce with an intense flavour during the long cooking process. Sheung noticed that the resulting sauce had a distinct umami flavor and was great for flavoring food, which led to its commercial use. Soon, oyster sauce became one of the key ingredients in Cantonese cuisine and spread to other parts of Asia. Today it is popular all over the world and is commonly used in Chinese, Thai and Vietnamese cuisine as a base for marinades, stir-fry dishes or to flavour vegetables and meat.
Traditionally, oyster sauce is made by slow-cooking oysters until they caramelise, giving them their characteristic colour and flavour.
Nowadays, vegan versions of this sauce are also available , using mushrooms such as shiitake instead of oysters to mimic its rich umami flavour.

Chinese cuisine: the diversity of flavours and traditions
Chinese cuisine is one of the oldest and most diverse cuisines in the world, with a history dating back thousands of years. Its uniqueness lies in the harmonious combination of flavours, textures and aromas, with each dish carefully balanced according to the yin and yang principle. Traditional Chinese cuisine is divided into several regional styles, the most famous being Cantonese, Sichuan, Shanghai and Beijing. Characteristic ingredients such as soy sauce, sesame oil, rice vinegar, tofu, ginger, star anise and Szechuan pepper give the dishes an unmistakable taste. Chopsticks are an essential part of the dining experience, reflecting the cultural emphasis on refinement and elegance at mealtimes.
Serving in China is based on sharing, where there are several different dishes on the table, each of which is taken according to taste. Not only noodles and rice are popular, but also traditional dim sum, small one-dish delicacies. Chinese cuisine emphasizes umami, the fifth taste, which is supported by fermented ingredients such as hoisin sauce, oyster sauce or fermented tofu. The importance of numbers in gastronomy is also interesting - for example, eight dishes on the festive table symbolise prosperity and good luck.

How did it all start?

The beginnings of a family business
The Andringa family started their business in the 1960s in Leeuwarden, selling cheese.
In 1983, however, Frans Andringa changed the direction of the company and switched to organic products, inspired by macrobiotic cuisine and organic farming.
He focused on research into organic production and launched a genuine organic cheese in Germany, where it quickly became a success.
He soon expanded the range to include other organic products such as jams, honey and peanut butter.
Pioneers in organic food
They pioneered the first processed organic products at German trade fairs and were a great success.
In 1985, they launched their Yakso brand, which offered organic products for the preparation of Asian and vegetarian dishes.
In 1989, growing demand necessitated a move to larger premises in Friesland, where they could expand production and output.

Yakso development

The road to healthy eating and eco-innovation
The Yakso brand began to develop significantly after 1985 with the aim of providing quality and healthy food. In recent years, it has also been committed to sustainability and social responsibility, as confirmed by certifications such as SKAL and GFSI.
In this way, Yakso has developed into a recognised brand synonymous with healthy and sustainable eating.
Yakso's main idea is to provide quality and healthy food that promotes sustainability and organic farming.
