Tandoori chicken thighs with rice (for 4 persons)
Raw materials
- 4 chicken thighs (preferably boneless)
- 1 jar of Yakso's Tandoori sauce
- 1 cup basmati rice
- 1 tablespoon vegetable oil
- 1 red onion, finely chopped
- 1 red pepper, cut into strips
- 1 smaller zucchini, cut into half circles
- 1 cup fresh pineapple (or from a can), cut into chunks
- 2 tablespoons chopped cashew nuts or peanuts
- Fresh coriander for garnish
- Lime slices for serving
Procedure
- Wash and dry the chicken thighs. Put them in a bowl and add the Tandoori sauce. Mix well so that the thighs are evenly coated. Allow to marinate for at least 30 minutes, but ideally 1-2 hours to allow the flavours to combine.
- Cook the basmati rice according to the instructions on the package. Once cooked, cover and set aside to keep warm.
- Heat 1 tablespoon of oil in a pan and fry the marinated chicken thighs. Sear them on all sides until golden brown (about 10-12 minutes on each side, depending on the size of the thighs), until cooked through.
