Butter chicken breast on the grill

Fancy a grilled chicken? This recipe is a healthier (but still tasty) version of grilled chicken cutlets.

It contains buttermilk, which helps tenderize the meat before frying, making it perfectly juicy. It also includes sriracha sauce for a spicy kick and new Red Rock BBQ seasoning for a delicious sugar-free flavor that will make these steaks disappear faster than you can fry them!

Ingredients

• 2 chicken breasts (each cut into 4 to 5 strips).
• 1 tablespoon Real Salt Red Rock BBQ Seasoning
• 1 tbsp Hunter and Gather Sriracha Sauce
• 3/4 cup buttermilk
• 1 teaspoon Real Salt Kosher Salt
• Organic cassava flour
• Organic coconut oil

Procedure

• Place the chicken strips in a plastic bag or bowl.
• Add Red Rock BBQ seasoning, kosher salt, hot sauce and buttermilk. Mix well and refrigerate overnight (or at least for a few hours).
• When you are ready to grill, heat the coconut oil in a cast iron or sturdy pot. You need to use enough oil to cover the thighs, at least 2-3 inches deep.
• Sift the flour into the bowl. Remove the chicken thighs from the bag and coat them one by one in flour. Let them rest for 10 minutes before frying.
• Make sure the oil is hot, about 160 °C. Fry the chicken until the internal temperature reaches 75° C, about 7-8 minutes.
• The breasts should be golden brown. Remove them from the oil and let them rest on a paper towel until you finish preparing.
• Serve with chipotle mayo or your favorite BBQ sauce from Hunter and Gather.
