- 1 jar Pineapple-coconut curry sauce from Yakso
- 1 cup basmati rice
- 1 small onion, finely chopped
- 1 red pepper, cut into strips
- 1 smaller zucchini, cut into half circles
- 1 cup fresh pineapple (or from a can), cut into chunks
- 200 g tofu (or chicken or prawns as preferred)
- 1 cup coconut milk (optional for a milder taste)
- 2 tablespoons peanut oil (or other vegetable oil)
- 2 tablespoons chopped cashew nuts or peanuts
- A pinch of salt and pepper
- Fresh coriander for garnish
- Lime slices for serving
Procedure
- Cook the basmati rice according to the instructions on the package. Once cooked, set aside and cover to keep warm.
- If using tofu, cut it into cubes and fry in 1 tablespoon of oil until golden brown. If you prefer chicken or prawns, fry them in a pan until golden. Then remove from the pan and set aside.
