Raw materials
- 110 g butter
- 75 g cane sugar
- 1 egg
- 1 teaspoon vanilla extract
- 125 g plain flour
- ½ teaspoon baking soda, ½ teaspoon salt
- 50 g chopped chocolate or chocolate lentils
- 20 g Turtle Marshmallow Crisps (plus a few on top for decoration)
Procedure
- Preheat the oven to 180 °C (160 °C with hot air) and line a baking tray with baking paper. In a bowl , beat the butter and sugar until light and foamy, add the eggs and vanilla extract and mix. In another bowl, combine the flour, baking soda and salt and gradually stir it into the butter mixture. Finally, add chopped chocolate and marshmallow crisps.
- Using a spoon , form mounds of dough on the baking sheet with sufficient spacing. Decorate each cookie with a few pieces of crisps on top. Bake for 8-10 minutes, until the edges start to turn golden. Let cool on the baking sheet for a while, then transfer to a wire rack.

No, not yet. Marshmallows contain gelatin of bovine origin. However, we are looking for a vegan alternative. The problem is that so far we can only find soft vegan marshmallows, not crunchy ones that would fit our recipe. We are working on a solution.
