Raw materials
- 1 pack Indonesian peanut soup Soto Katjang from PraveBio
- 200 g tofu (ideally extra firm tofu, cut into cubes)
- 1 medium onion, finely chopped
- 2 garlic cloves, chopped (can also be substituted this finely chopped)
- 1 medium carrot, thinly sliced
- 1 zucchini, cut in half
- 1 cup broccoli, divided into small florets
- 1-2 tablespoons vegetable oil for frying
- 1 cup cooked basmati rice (optional, for serving)
- Lime for garnish
- Fresh coriander for garnish
- 1 tablespoon soy sauce (optional, for flavouring tofu).
Preparation
- Cut the tofu into cubes. Heat 1 tablespoon of oil in a pan and fry the tofu until golden brown, about 5-7 minutes. If you want to flavour the tofu, add a spoonful of soy sauce while frying. After the tofu is browned, remove and set aside.
