Krupuk: A traditional Indonesian delicacy with modern potential

Krupuk has deep roots in Indonesia, where it originally originated as a practical way to use up leftover fish or shrimp by mixing it with tapioca flour. Tapioca, an inexpensive and readily available raw material extracted from the cassava root, has helped create a dish that has become an integral part of Indonesians' daily diet and their festive meals. It symbolizes simplicity and culinary ingenuity.

Each region of Indonesia brings its own unique variations - from fish chips from East Java to spicy versions from West Sumatra. Today, semolina finds its place not only in traditional cuisine, but also in modern gastronomy, where chefs see it as a "blank canvas". Its lightness and crunch complement dense dishes perfectly, while its neutral base readily accepts new flavours and aromas, making it an ideal ingredient for creative culinary experiments.

Krupuk krevetový

Indonesian crackers (krupuk) - shrimp - traditional use

Corn is traditionally served as an accompaniment to many Indonesian dishes. Its light and crunchy texture contrasts perfectly with rice, sauces or rich meat dishes.

  • Nasi Goreng: Fried rice, often accompanied by semolina, which adds another layer of flavour and texture to the dish.
  • Soto: Traditional Indonesian soup (e.g. chicken or beef) served with rice and crispy chips.
  • Gado-Gado: Vegetable salad with peanut sauce, where the grits often act as a "spoon" to scoop up the sauce
  • Satay: Grilled meat skewers, served with peanut sauce, with grits as a side dish.
  • Tumpeng: A traditional festive dish where pyramidal rice is surrounded by side dishes including krupuk.

In modern gastronomy , it is often served as an amuse-bouche or a side dish to sophisticated dishes in upscale restaurants.

Some chefs incorporate it into gastronomic experiments, using it as a base for desserts or combining it with mousses and dips.

Thanks to snack trends, semolina is also being adapted into healthier options with less oil and modern flavours such as chilli-lime or black garlic.

Indonesian cuisine: the diversity of flavours and traditions

Indonesian cuisine is unique in its diversity, reflecting the country's rich culture and natural resources. It is characterised by a balanced combination of flavours - sweet, salty, sour, bitter and spicy - that create an unforgettable experience. Key ingredients include coconut milk, turmeric, ginger, lemongrass, chillies and tamarind. These ingredients are the basis of iconic dishes such as Nasi Goreng (fried rice), Satay (meat skewers with peanut sauce), Rendang (slow-cooked beef in coconut sauce) or Gado-Gado (vegetable salad with peanut sauce). Rice is an essential part of most dishes and is often combined with meat, vegetables or spicy sauces.

The serving and dining methods are also interesting. The dishes are traditionally served on banana leaves, which add a delicate flavour to the food and are an eco-friendly alternative. The food is often shared in the middle of the table, where several smaller bowls of different dishes are served, from which each person takes their pick. In many areas, eating with the hands is still considered a natural and culturally rooted way of eating. This approach emphasises the importance of dining together and connecting with food.

Indonesian cuisine is not only about flavours, but also about traditions and stories that have been passed down from generation to generation. Each dish reflects the influences of different regions and cultures, making this cuisine unique and rich. It is a cuisine that celebrates community, sharing and respect for natural resources, making it one of the strongest symbols of Indonesian identity.

Who is behind the Yakso brand

The Yakso brand is the result of a long family tradition that dates back to the 60s, when it was founded by the FZ ORGANIC FOOD family Andringa, which originally focused on the sale of cheeses.

Founder Frans Andringa shifted his focus to organic products in 1983 and gradually expanded the range to include cheese, jams, chips and other organic foods. Today the company is run by his sons Folmer and Bjorn Andringa, making it a third-generation family business.

Yakso focuses on using traditional recipes and natural methods, sourcing quality organic ingredients from around the world. They aim to bring authentic flavours to the kitchen and promote a healthy lifestyle.

The brand's philosophy is based on respect for nature and the environment, which makes their products unique and in line with conscious eating.

Other brands in this group include Bionova and Trafo. Yakso offers tasty, organic products that allow you to prepare oriental dishes with ease.

This need for authentic flavors in health food stores led to the founding of the Yakso brand in 1983, bringing healthy, simple and affordable solutions to your kitchen. The Japanese meaning of the word Yakso, "Cleanse your body with food", perfectly matches their products.

How did it all start?

The beginnings of a family business

The Andringa family started their business in the 1960s in Leeuwarden, selling cheese.

In 1983, however, Frans Andringa changed the direction of the company and switched to organic products, inspired by macrobiotic cuisine and organic farming.

He focused on research into organic production and launched a genuine organic cheese in Germany, where it quickly became a success.

He soon expanded the range to include other organic products such as jams, honey and peanut butter.

Pioneers in organic food

They pioneered the first processed organic products at German trade fairs and were a great success.

In 1985, they launched their Yakso brand, which offered organic products for the preparation of Asian and vegetarian dishes.

In 1989, growing demand necessitated a move to larger premises in Friesland, where they could expand production and output.

Yakso development

The road to healthy eating and eco-innovation

The Yakso brand began to develop significantly after 1985 with the aim of providing quality and healthy food. In response to the growing demand for organic and natural products, it has focused on organic farming and working with local farmers, which has promoted sustainable practices and strengthened the community economy.

With its emphasis on innovation and quality, Yakso has become the market leader in Asian food in Europe, with an expanded range that includes sauces and noodles. In recent years, it has also been committed to sustainability and social responsibility, as confirmed by certifications such as SKAL and GFSI.

In this way, Yakso has developed into a recognised brand synonymous with healthy and sustainable eating.

Yakso's main idea is to provide quality and healthy food that promotes sustainability and organic farming.
