Dosage

What is olive oil high in polyphenols?
Olive oil naturally contains more than 30 different phenolic compoundsincluding oleacein, tyrosol and hydroxytyrosol. According to the accepted definition, a high polyphenol oil has a minimum of 250 mg of polyphenols per 1 kg. Not every olive oil fits this category - it depends on the variety, processing and storage.
V European Union only oils that contain at least 5 mg of hydroxytyrosol and its derivatives per 20 g can carry an approved health claim:
"Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress."
Benefits of olive oil high in polyphenols
One of the most well-known benefits of olive oil is its high proportion of monounsaturated fats, which are associated with a reduced risk of heart disease and stroke. Extra information on olive oils with high phenolic content
Olive oils high in phenolics are a specific category of extra virgin olive oil (EVOO) that contain high levels of so-called polyphenols - natural compounds directly linked to health benefits.
According to EU Regulation 432/2012, health claims can only be used for oils that contain at least 5 mg of hydroxytyrosol and its derivatives (e.g. oleuropein complex and tyrosol) for every 20 g of olive oil.
A daily intake of 20 g (about 2 tablespoons) of such oil helps to protect blood lipids from oxidative stress.
Major institutions such as the University of California, Davis, Harvard University and many other research centres have confirmed these findings and supported them with numerous studies over the last decade.

What are phenolic compounds?
Phenolic compounds are natural phytochemicals, i.e. secondary metabolites of plants. They are found in fruits, vegetables, legumes, seeds, whole grains, but also in beverages such as tea, coffee and wine, fats (e.g. olive oil) and spices.
However, there are phenolic substances specific only to olive oil that are produced during the malaxation process (fine kneading of the olive paste). At least 36 different phenolic compounds are currently identified in olive oil.
The most researched are oleocanthal a oleaceinknown for their anti-inflammatory and antioxidant properties.
Oleocanthal causes a typical "peppery" sensation in the throat, which can trigger a slight cough reflex. Oleacein, on the other hand, is responsible for the mild bitterness on the tongue. These manifestations are a sign of quality and high polyphenol content - unfortunately often mistakenly perceived as a defect by people used to supermarket oils.
The polyphenol content depends on many factors: the olive variety, the date of harvest, the milling method, the soil, the climate and the overall biodiversity of the olive grove. Any drought, wind or rain during the ripening process affects both the amount of oil and its composition.
It is important for you, the buyer, to know
If you are buying EVOO with a high polyphenol content for its health benefits, it should be consumed daily and only cold - ideally drizzled over food or in salads.
When cooking or frying, we recommend reaching for a regular extra virgin olive oil and keep the highly phenolic oil for daily functional use.
Storage
It is recommended to use up olive oil with a high polyphenol content as soon as possible - do not save it for a "special occasion". After opening, it is important to protect it from light, heat, air and time, as these factors accelerate the loss of active substances.
It is ideal to store the oil in dark bottles of 250-1000 ml, in a cool and dark place - never directly by the stove. Always close the bottle thoroughly after each use.
Phenolic compounds can partially evaporate from an open bottle. If you buy larger packs, store them in the fridge and gradually transfer the oil into smaller glass containers.
Why is this type of olive oil more expensive?
Extra virgin olive oil with a high polyphenol content is more expensive than conventional oils on the market. This is due to more demanding cultivation practices, gentle hand harvesting and fast processing, which ensure the preservation of active ingredients - but also increase production costs.
It is important to note: "Olive oil with high phenolic content" is not a separate official category according to the EU. It falls under the general designation of extra virgin olive oil. This term is used only for products containing more than 250 mg of polyphenols per kg of oil.
