Harissa is a traditional North African spice paste that is characterized by a distinctive hot, smoky and slightly sour taste. Roasted vegetables with Harissa (for 4 servings)

Raw materials

  • 2-3 tablespoons harissa paste
  • 1 large sweet potato (diced)
  • 1 red pepper (cut into strips)
  • 1 zucchini (sliced)
  • 1 red onion (on wedges)
  • 200 g chickpeas (cooked or canned, drained)
  • Salt to taste
  • Optional: fresh parsley or cilantro for garnish.

Procedure

  • In a bowl , mix the sweet potatoes, peppers, zucchini, onion and chickpeas. Add the Harissa and mix so that the vegetables are evenly coated with the paste.
  • Spread the vegetables on a baking tray lined with baking paper and bake in a preheated oven at 200 °C for 25-30 minutes. In the middle of roasting, stir the vegetables.
  • Transfer the roasted vegetables to a plate, garnish with fresh herbs and serve as a side dish or main dish with couscous, rice or bread.
Note: This Harissa paste already contains oil, so there is no need to add more. However, if the paste is too thick or spicy, you can soften it with a little olive oil.

The Andringa family started their business in the 1960s in Leeuwarden, selling cheese.
