Procedure

  • Cook the pasta in plenty of salted water according to the instructions on the package. Cook them al dente, drain and keep about 1/2 cup of the cooking water.

  • Heat the olive oil in a pan. Add the garlic paste and sauté briefly until you can smell the aroma (about 1 minute). Be careful not to burn the garlic!

  • Add the cooked pasta to the pan with the garlic mixture. If the mixture is too dry, add a little pasta water to make a smooth sauce.

  • Add dried herbs, salt and pepper to taste. Stir and heat briefly.

  • Divide the pasta among the plates, sprinkle with grated parmesan cheese and freshly chopped parsley. Serve.

The Andringa family started their business in the 1960s in Leeuwarden, selling cheese.
