Deficiency of diaminoxidase (DAO) is one of the most common causes of histamine intolerance. The enzyme DAO is responsible for breaking down histamine in the body. When it can't break everything down, it builds up and you experience symptoms of histamine intolerance.
In addition to taking a dietary supplement with DAO, there are some easy-to-implement changes to your eating habits that support healthy levels of the DAO enzyme.
DAO and histamine intolerance
Research shows that at least 1% of the world's population suffers from histamine intolerance and almost 80% of them are women.
Histamine intolerance results from the overproduction and accumulation of histamine in the body and the inability to break it down. This can cause a range of chronic symptoms such as allergic reactions, gastrointestinal disorders (IBS), congestion and asthma, among others.

To date, many studies have been conducted on the prevention of DAO deficiency in the body, and researchers have even identified ways to potentially prevent and even reverse histamine intolerance.
1. Start a low histamine diet
A recent study found that dietary modification is the first step to reducing symptoms associated with histamine intolerance. By eliminating foods high in histamine from your diet, you allow your body to catch up and process the amount of histamine already present. The study also found that these dietary modifications positively affect the movement of DAO enzymes throughout the body.

2. Balance your fat intake
When it comes to updating your diet, some of the most interesting and relevant results for increasing DAO enzymes were related to fat consumption.
Studies have shown beneficial results when patients increased their intake of omega-9 fatty acids - monounsaturated fats that are the main source of oleic acid. In particular, high-quality olive oil has been shown to increase the release of the enzyme DAO into the bloodstream by up to 500%!
Oleic acid has been shown to have other health benefits, such as lowering blood pressure, especially when consumed as part of a Mediterranean-type diet. You can cook with olive oil or include nuts such as macadamia nuts in your diet to prevent DAO deficiency.
Meanwhile, inflammatory arachidonic acid, an omega-6 polyunsaturated fatty acid found in tripe, fatty red meat and dairy products (especially hard cheese and eggs), has been found to cause the highest increase in histamine compared to other foods.
