Coconut glaze
My favorite use of coconut butter is as a sweet frosting for cakes. Prepare your favourite pancakes, pancakes, omelettes or other cakes. Put a few spoonfuls of coconut butter on them and wait for a while. The butter melts beautifully and after a while it soaks perfectly into pancakes, cakes, crepes, etc. It's absolutely yummy.
Coconut milk
I often find that I only need a little coconut milk for a particular dish and a whole can is too much. That's when coconut butter comes in handy, when you can make exactly as much coconut milk as you need.
You can prepare coconut milk in two ways:
- In a blender, blend 65 g of coconut butter (about 7-8 tablespoons) with a glass of water and you're done. The exact ratio is 25 g of coconut butter for every 100 ml of water. It is best to use room temperature or slightly warm water.
- When you want to cook oatmeal or semolina porridge or rice with coconut milk. Just add a few tablespoons of coconut butter to the boiling rice/porridge. Wait a few seconds, the butter will melt on its own and you have ready coconut milk. I often prepare porridge this way.
Coconut Raffaello
Ingredients
- 100 g of yams
- 3 tablespoons coconut milk
- 3 tablespoons coconut sugar or coconut syrup
- 1 tablespoon coconut flour
- grated coconut
Preparation
- Prepare the buckwheat according to the instructions.
- Set the cooked soybeans aside to cool a little.
- Add coconut milk prepared from coconut butter, coconut sugar and coconut flour to the cooked nuts.
- Blend until smooth.
- With wet hands, shape the balls and roll them in shredded coconut.
- Place the balls in the fridge for 5 hours.

The brand's name refers to the country that its founders consider home, Ceylon, Sri Lanka, where the coconuts for the coconut line of products are grown and processed. Ceylon, a British Crown Colony from 1815-1948, is now known as Sri Lanka, but the founders of the brand prefer to call it Ceylon because it definitely sounds more exotic and "pure Ceylon" is a brand in itself, reminiscent of the fresh unique essence of pure Ceylon tea. "Kokonati" on the other hand is Maori for coconut, so absolutely the most appropriate brand name for the most coconutty goodness ever.
The Ceilon Kokonati brand is run by a married couple. The female founding half is Mrs. Bûmika, which means Lady of the Earth in Sanskrit. Her great-grandfather was one of the pioneers of coconut oil pressing in Ceylon, making her the fourth generation of coconut oil presser. The male founding half, Mr. Mosqi, in turn, is originally a pure Ceylon tea grower.
