Recipe for Beef Rendang (4 servings)
Raw materials
- 500 g of beef (ideally leg or brisket, cut into larger cubes)
- 2 tablespoons Rendang seasoning paste
- 400 ml coconut milk
- 1 lemon grass (crushed) or 1 teaspoon dried lemongrass
- 2 tablespoons coconut or avocado oil
- Salt to taste
Preparation instructions
- Soak dried lemongrass in hot water for 10-15 minutes to re-hydrate and release its aroma. Keep the soaking liquid and add it to the dish to enhance the flavour.
- Heat the oil in a pan or pot and add the Rendang seasoning paste. Sauté over medium heat for 2-3 minutes until tender.
- Add the beef cubes and coat them thoroughly in the paste. Allow the meat to roast for another 5 minutes to allow it to sear.
- Pour the coconut milk over the mixture and add fresh lemongrass or prepared dried lemongrass (including the soaking liquid). Bring to the boil and then reduce the heat to minimum.
- Simmer on low heat for 2-3 hours until the sauce reduces to a thick consistency and the meat is tender. Stir continuously to prevent the mixture from burning.
- Add salt as needed.
Slow cooker alternative
If you have a slow cooker, you can proceed as follows:
- Fry the spice paste and meat in the pan according to steps 2 and 3.
- Transfer the mixture to a slow cooker, add the coconut milk and lemongrass (fresh or dried).
- Set the pot on low and cook for 6-8 hours, or on high for 4-5 hours.
- Towards the end, remove the lid to reduce and thicken the sauce.
