Ingredients:
- 300 g plain flour
- 200 g butter (cold, cubed)
- 100 g powdered sugar
- 2 egg yolks
- Peel of 1 lemon (or try dried lemon grass)
- 200 g apricot jam
For decoration:
- powdered sugar for sprinkling
Procedure:
- Mix flour, sugar and grated lemon zest in a bowl. Add the butter and quickly work it into a crumble with your fingers. Then add the egg yolks and make a smooth dough.
- Divide the dough into two parts - one slightly larger than the other. Roll out the larger part to the size of a baking tray and place it on the bottom of a baking tray (approx. 20x30 cm) lined with baking paper.
- Spread a layer of apricot jam evenly over the dough.
- Roll out the smaller part of the dough, cut into strips and make a lattice on the jam.
- Bake in a preheated oven at 180 °C for about 25 - 30 minutes, until the dough is golden.
- Once cooled, sprinkle with icing sugar, cut into slices and serve.

The Andringa family started their business in the 1960s in Leeuwarden, selling cheese.
